Grilled Salmon and Fancy Rocket Salad


Salmon is one of my favourite foods!

This is such an easy and delicious way to make it.

What you need:
Salmon (one piece per person) Skin On
Avocado Oil
Rocket (arugula)
Micro Greens, I used snow pea and radish sprouts this time
Radish, (two per person)
Avocado (1/4 per person)
Red Onion (a few slices per person()
Olive Oil
Sherry Vinegar
Capers
Slat and Pepper

What you do:
Preheat BBQ to 200°C (400°F)
Coat all sides of Salmon with Avocado Oil and sprinkle with Salt and Pepper
Cook all four sides for three minutes each ... finishing with skin side so it is nice and crispy!

Prepare salad on individual plates.
Lay Rocket on the bottom and top with some Micro Greens.
Thinly slice Avocado, Radish and Red Onion. Add to salad.
Drizzle with Olive Oil, Sherry Vinegar.
Sprinkle with Salt.

When Salmon is cooked, place on top of Salad.
Sprinkle with Capers and a few more Micro Greens.
